Green artichokes, also known as a French artichoke are loaded with nutrients and have been proven to have a variety of health benefits. Some of these benefits include the lowering LDL and increasing HDL and regulating blood pressure. The edible portion of the plant is the flower bud that is harvested before the flower opens in late summer or early fall.
Artichokes are easy to prep and low-waste. Just removed the outer few bracts and cut off the top half-inch of the remainder, and the rest of the artichoke should be good to go!
Some delicious ways to enjoy our organic artichokes. Chop them in halves and sauté or shave thinly and throw into any roasted roots dish to sweeten it up.
